PB&J Granola Crumble Muffins

INGREDIENTS

For the Muffin:

  • 25g self-raising flower 
  • 20g protein powder (PB or Vanilla)
  • 1/8tsp baking power
  • 2tsp erythritol 
  • 60ml almond milk
  • 7g melted butter


For the filling:

  • 1/2tsp peanut butter
  • 2/3tsp strawberry jam


For the topping:

  • FUEL10K Peanut Crunch Granola

PEANUT CRUNCH GRANOLA
1Pre-heat your oven to 175
2Mix together all of your cake ingredients
3Spoon 2/3 of the batter between 2 cake cakes, making a well in the centre of each
4Fill the well with PB and Jam, then top with the remaining 1/3 of batter, making sure to seal in the jam filling!
5Sprinkle over your FUEL10K Peanut Granola and press down lightly to make sure it's stuck
6Bake for around 20 mins, then leave to cool
