No-Bake Granola Breakfast Cookie

MAKES 4-6 COOKIES
INGREDIENTS
- 200g FUEL10K Granola (your choice of flavour!)
- 50g coconut oil
- 50g smooth peanut butter

1Line a baking sheet with parchment paper
2In a food processor, pulse granola 3-4 times to break up any big clumps. Place granola into a medium bowl and set aside
3Melt the coconut oil in a small pot. Once melted, add the peanut butter and stir until creamy smooth
4Pour wet mixture over granola and mix
5Scoop out mixture onto prepared baking sheet - you will get 4-6 cookies total
6Using your fingers, press each scoop into a round cookie shape
7Place into the freezer to harden, for at least 45 minutes. Once cookies are set, remove from the freezer, spread yogurt over the cookie, and top with your favourite fruits and yog
